Vegan Potato Salad

Summer is here!  It's time for parties, playdates, picnics annnnnd potato salad!  Who doesn't love a good potato salad?  I can't imagine my world without it!  Ladies and gents, this salad is so delicious and so easy to make.  With just a few simple ingredients and the star of the show, Vegenaise, you can whip this together in no time.  Get ready, because you're about to be on every "must invite" list this summer.  Enjoy!





  • 6 red or white potatoes

  • 1/2 cup Vegenaise (I like the soy-free Follow Your Heart brand)

  • 2 tbsp white wine vinegar

  • 2 tbsp mustard (brown or yellow)

  • 1 medium onion, diced

  • 2 stalks celery, diced

  • 1/3 cup cornichons, sliced

  • 2 tbsp fresh dill, minced

  • salt and pepper to taste


  1. Bring a large pot of salted water to a boil.  Clean and cube potatoes, skin on, add to boiling water.  Cook until tender, but firm, about 15 minutes. 

  2. Drain potatoes in strainer, let cool completely, about 15 min.

  3. Gently mix together all remaining ingredients in a large bowl, add the potatoes and gently toss together until evenly coated.
