First of all, who doesn't like a good bowl? I mean, they are just simply delicious. This Probiotic Power Bowl is exactly what you need to start your morning, or afternoon, or heck, have it for dinner if you want! With two versions to choose from, it's perfect for anytime of day. Let's dissect this bowl for a min. Lentils, I loooove me some lentils. They are full of protein, fiber and keep me full for hours. Oh, and give me lots of energy! Whoohoo! I always like to cook them with some spices and herbs to amp them up a bit, but they are delicious on their own. Then we have our bff, kale. Kale is always the healthiest one at the party. Like, who could ever say a bad thing about kale? It's the most nutrient dense food around, and has 4x as much Vitamin C as spinach. For this bowl, it's quickly sautéed with a little bit of evoo, breaking down its cellular wall and making it a tad easier digest. Kimchi is what gives this bowl its name. I can't express to you the powers that kimchi holds. Fermented foods should be consumed daily for good gut health. I could go on and on about how important it is to have a strong microbiome, but I'll just stick to the kimchi for now. It's excellent for digestive health with its abundance of probiotics, has anti-aging properties and can prevent cancer.
If you're completely against eating kimchi, I won't be mad at you. I mean, I will secretly be disappointed, but you're in charge of you, I guess. So I have another option for you. Coconut yogurt, but LIVING coconut yogurt. It's called CocoYo and there are different flavors. I used ginger turmeric for this dish because it blends together beautifully. I love it because it has the consistency and tanginess of Greek yogurt, but is made from raw young coconut and has 25 billion CFUs, which is a drastic difference from dairy based yogurt. Add to this a spoonful of fig jam and some dried cranberries, and you have yourself one hell of a bowl! Go with your gut, pick your probiotic, and let's get this bowl rollin!

Kimchi Probiotic Power Bowl
CocoYo Probiotic Power Bowl
1 cup green lentils
1 bunch kale, off stem, chopped (any type is fine)
1/4 cup kimchi (this is the kind I love)
1/4 cup dried cranberries
1 clove garlic, minced
2 cups water
2 tbsp evoo
1/4 tsp dried basil
1/4 tsp dried parsley
1/4 tsp turmeric powder, plus a pinch
1/4 tsp ginger powder
dash of salt and pepper (for both lentils and kale)
Lentils: Wash lentils and add to a pot w/ 2 cups of water. Add basil, parsley, 1/4 tsp turmeric, ginger and a dash of salt and pepper. On high, bring lentils to a boil. Once boiling, turn heat on low and cook covered for 30 min.
Sautéed Kale: In a pan on medium low, add 2 tbsp of evoo. Mince garlic and add to pan. Rinse kale and strip from stem, roughly chop, add to pan. Season with a pinch of turmeric powder, salt and pepper. Sauté for about 3-5 min, or until bright green and slightly soft, (don't overcook). Turn off heat, add in dried cranberries, and stir.
Scoop desired amount of lentils in the pan w/ kale and stir.
Add kale and lentil mixture to a bowl and top with kimchi, or CocoYo and fig jam.
