1 can garbanzo beans, drained and rinsed
1/4 cup red onion, chopped
1 tsp turmeric
2 tbsp fresh dill, chopped
1/4 tsp garlic powder
1/4 tsp salt
dash of pepper
1/4 tsp coriander
2 tbsp dijon mustard
1/4 cup tahini
4 avocados ripe, pitted and cut in half
1/2 lemon, juiced
Add the garbanzo beans to a medium mixing bowl and mash using a fork. Add onion, turmeric, dill, garlic powder, salt, pepper, coriander, mustard, and tahini. Mix until all ingredients are combined.
Spoon chickpea salad mixture on top of the avocados, drizzle with lemon juice, serve immediately.
