Anti-Inflammatory Avocado Boats

I love boats in the summertime, especially when they are avocados stuffed with a garbanzo bean salad. You won't need your sea legs to get onboard with this recipe. These avocado boats are so full of health benefits, they could sink a ship! HA!  Let's take a closer look as to what exactly we are making.  Avocados are a great source of healthy fat, great for our skin and leave us feeling full, longer.  Garbanzo beans are a great complex carb, meaning the body takes its time digesting them and turns them into energy.  Because of this, they also have the ability to keep us full longer.  Garbanzo beans have an alkalizing effect on the body, which combats high levels of acidity. Turmeric is the showstopper here.  The big fish, if you will.  The active substance in turmeric is curcumin.  When paired with black pepper or a healthy fat, (this makes it more bioavailable), this powerful plant has the ability to lower inflammation, reduce depression, boost skin health, and manage diabetes, just to name a few.  I personally take turmeric daily to help fight inflammation, and always get it organic and gmo free. Ingredients 

  • 1 can garbanzo beans, drained and rinsed

  • 1/4 cup red onion, chopped

  • 1 tsp turmeric

  • 2 tbsp fresh dill, chopped

  • 1/4 tsp garlic powder

  • 1/4 tsp salt

  • dash of pepper

  • 1/4 tsp coriander 

  • 2 tbsp dijon mustard

  • 1/4 cup tahini

  • 4 avocados ripe, pitted and cut in half

  • 1/2 lemon, juiced

 

Instructions

  1. Add the garbanzo beans to a medium mixing bowl and mash using a fork. Add onion, turmeric, dill, garlic powder, salt, pepper, coriander, mustard, and tahini. Mix until all ingredients are combined.

  2. Spoon chickpea salad mixture on top of the avocados, drizzle with lemon juice, serve immediately.
