Meet Jacquelyn

Hi and welcome!  I'm Jacquelyn, a Health and Wellness Coach/Chef, and Founder of Starving and Single and SolFood Collective. I'm a big advocate of using food as medicine, being a voice for the animals and spreading the message of compassion, while living a healthy plant-based, cruelty-free lifestyle. I see the importance in teaching others how easy and life-changing eating vegan and being cruelty-fee can be. I love hosting my SolFood Collective Events, eating clean, doing yoga, meditating, and spending time in the kitchen creating recipes and making videos for my YouTube Channel. I believe what we feed our mind is equally as important as what we feed our body. When you understand that the mind and body are connected, you can create an environment for the body to live in balance. I am very proud to say, I was able to live out my dream of being on the Food Network! I was featured on Season 10 of The Great Food Truck Race, where my SolFood Collective truck served delicious vegan dishes. My goal is to one day have a Health and Wellness show to educate and heal as many people as possible.


I started my journey in health and wellness after I was diagnosed with an autoimmune disease called Ankylosing Spondylitis, (a.k.a the bamboo spine) in 2015 and used food as medicine to reverse my symptoms. Before changing my way of eating, my disease progressed, leaving me unable to walk and in need of constant care. After getting my diagnosis and being treated with medications that didn't work, I was told chemotherapy was my future. I decided to take matters into my own hands and adopt a vegan lifestyle. Within 6 months I was able to walk again, I got off all medications, lowered my inflammation, was getting a solid 8 hours of sleep, repaired my gut health, balanced my hormones, lost 40 pounds, and was pain free for the first time in over 20 years. Living the vibrant life I've always envisioned, I now take my experience, knowledge, and love of food to help others overcome their struggles with health and get on the road to recovery.

 

Many of us deal with gut issues, inflammation, depression, skin irritations and so on. I believe you don't need to be on a ton of medications to feel better. It's only putting a band-aid on the problem. Let's get to the root cause and rip that band-aid off! Let's eat right and get rid of our excuses for never feeling well. I offer clients one-on-one holistic support for overall wellness, integrating the methods I used on my journey. Whether you are looking to reverse symptoms due to an autoimmune related disease, have chronic pain and inflammation, or poor gut health, or you just want ideas to improve your health, I am here to help
